CHRISTMAS DAY BUFFET BREAKFAST

Start Christmas Day the perfect way – with a delicious buffet breakfast in stunning surrounds.

Indulge in a festive spread featuring fluffy pancakes with maple syrup, crisp bacon, Tasmanian smoked salmon, freshly baked pastries, seasonal fruit, and a selection of gourmet cheeses. Pair your breakfast with freshly brewed coffee, tea, or a refreshing juice to set the tone for a day filled with celebration.

The Christmas Day Buffet Breakfast will be available at Highland Restaurant on Wednesday, 25th December 2024, from 7:00 AM – 10:00 AM, priced at $39 per adult and $19.50 per child (aged 4-11 years). Children under 3 dine free. Please note, breakfast is complimentary for in-house guests.

Kick off the festivities with a glass of Josef Chromy NV Tasmanian Cuvée on arrival, setting the tone for an unforgettable dining experience. Then, indulge in a sumptuous Buffet Lunch featuring holiday favourites, including roast turkey with cranberry sauce, succulent Tasmanian smoked salmon, Barilla Bay oysters, whole cooked tiger prawns, and indulgent Christmas puddings served with brandy custard.

Embrace the spirit of the season with a culinary experience filled with tradition, warmth, and festive cheer!

The Christmas Day Buffet Lunch will be available at Highland Restaurant on Wednesday, 25th December 2024, from 12:00 PM – 2:00 PM, priced at $220 per adult and $110 per child (aged 4-11 years). Children under 3 dine free.

CHRISTMAS DAY DINNER

Join us for an evening of holiday warmth and elegance at Highland Restaurant

Indulge in a series of unforgettable courses, starting with an array of festive bites to share, including oysters with champagne granita and finger lime caviar, a succulent lobster roll with Marie Rose sauce, and baked Tasmanian scallops topped with herb butter and puffed wild rice. A crisp focaccia course follows, featuring double-smoked ham, pickled carrot, house-made stout mustard, and whipped brie.

For the main course, savour a traditional roast porchetta served with apple, charred onion, and sage, complemented by delicious sides including truffled mash, roasted vegetables, and a mixed leaf salad.

End the evening on a sweet note with a decadent Christmas pudding, served with brandy custard semifreddo, cherry, and mint.

Christmas Day Dinner will be served at Highland Restaurant on Wednesday, 25th December 2024, from 5:30 PM, priced at $189 per adult and $129 for those aged 13-17.

NEW YEAR’S EVE DEGUSTATION DINNER

Join us at Highland Restaurant for an unforgettable evening to ring in the New Year.

Start with a glass of Josef Chromy NV Tasmanian Cuvée and enjoy a carefully prepared menu designed to celebrate the occasion.

Begin the evening with focaccia served with cultured black garlic butter, followed by a selection of snacks to share, including oysters with champagne granita and finger lime caviar, lobster rolls with Marie Rose sauce, and baked Tasmanian scallops with herb butter and puffed wild rice.

For the first course, savour Hiromasa kingfish, complemented by almond, dill, green apple, radish, flying fish caviar, and finger lime. The second course features a shared plate of beef carpaccio, truffle aioli, parmesan, yuzu olive oil, and pickled mushrooms.

Indulge in a twice-baked gruyere soufflé with fennel and mandarin salad, topped with toasted hazelnut. The main course is a showstopper: Côte de Boeuf – Cape Grim rib eye, served with truffle mash, seasoned greens, truffle béarnaise, and French fries.

End the evening on a sweet note with a yuzu and lemon tart with meringue, raspberry gel, and lime sherbet.

The New Year’s Eve Degustation will be served at Highland Restaurant on Tuesday, 31st December 2024, from 6:30 PM, priced at $195 per person.
